Deceptively Delicious Meatloaf

Inspired by Jessica Seinfeld herself (Jerry's wife), this is a variation on the one in her cookbook.  Prepped it this morning, will toss it in the oven about 45 minutes before mealtime.
The mini-loaf size is perfect for wrapping in freezer paper (after cooking) and freezing in individual serving portions.

1.  Heat up a big skillet with

     2 Tbs Olive oil

2.  Add and saute for 5 min over med-hi heat
 
     1/2 onion

3.  Then add and continue to cook another 5 minutes

     1/2 red pepper, diced
     1/2 yellow pepper, diced
     1 large garlic clove or 1 Tbsp minced
     2 stalks celery, minced

4.  While this is cooking get out a big mixing bowl and put in it

     1 cup bread crumbs (can be made from 3 pcs toast chopped fine)
     1/2 cup milk
     2 Tbsp italian seasoning
     1 Tbsp tabasco
     1 Tbsp Worcestershire
     1 cup grated parmesan cheese
     1 lb ground turkey
     1/2 cup carrot puree (best made ahead and frozen in baggies)
     salt and pepper to taste

5.  By the time you get all that together, the veggies will be done cooking.  Mix it all together and put it in whatever you are going to bake it in (1 big loaf pan, several little ones, muffin tins, whatever).
Smooth them out on top with a butter knife then spread over the top:

     Ketchup

then sprinkle with:

     3 pcs chopped raw bacon

6.  At this point you can put it in the fridge and wait till dinnertime to cook it.  Just don't put foil over it because tomatos (ie ketchup) will eat through the aluminum.  Leave it uncovered or if that bothers you use plastic wrap.

7.  Bake at 350 for a max of 50 minutes (large loaf).  Enjoy!
